CHICAGO – Food safety experts are urging cooks to avoid washing raw turkey ahead of holiday meals, as this practice can spread harmful bacteria to kitchen surfaces and other foods. Despite federal guidelines against rinsing poultry since 2005, a 2020 survey found 78% of people still do so. The USDA and CDC recommend handling raw turkey with care, using separate cutting boards, and washing hands thoroughly. Ensuring the turkey reaches an internal temperature of 165°F and following proper thawing, storage, and reheating practices are key to preventing foodborne illness during the holiday season.
